Summer on the North Fork is all about fresh seafood, farm stand vegetables, juicy tomatoes, sweet corn, and simple dishes that let great ingredients shine. In this hands-on class, we'll create a beautiful summer lunch inspired by some of the region's most iconic flavors while learning techniques that will make seasonal cooking feel easy, approachable, and fun.

We'll make: Gazpacho with Local Tomatoes & Cucumbers, Grilled Striped Bass with herb sauce, Sweet Corn Salad and Homemade Ricotta with Grilled Peaches, Honey & Mint.

Along the way, we'll explore how to select and prepare fresh fish with confidence, balance acidity, salt, and herbs to create vibrant summer flavors, and make the most of peak-season produce from local farms. You'll also learn just how simple and rewarding it is to make fresh ricotta from scratch—a technique you'll want to use all season long.

The vibe is relaxed, interactive, and very hands-on with lots of chopping, stirring, tasting and learning as we go. We'll wrap things up by sitting down together to enjoy everything family-style with some summer sips. Come hungry, curious, and ready to celebrate the best of the North Fork season.
