Join us for a one-of-a-kind evening celebrating one of the North Fork's greatest treasures...local oysters!

Our instructors are Elizabeth Peeples and Stefanie Bassett of Little Ram Oysters, two of the North Fork's most respected oyster farmers and the people who know these waters better than almost anyone.

This isn't just a cooking class, it's an opportunity to step inside the world of oyster farming and experience the journey from bay to table. Through stories from life on the water, hands-on instruction, cooking, and plenty of tasting, you'll discover what makes North Fork oysters so exceptional and how the unique conditions of our local bays shape every shell.

We'll Learn, Make & Taste

  • Oyster Farming 101 — Learn how oysters are cultivated, harvested, and cared for from the farmers who grow them.
  • Freshly Shucked OystersLearn the technique of safely shucking oysters with confidence, taste local oysters at their peak and learn how to beautifully serve them at home.
  • Compound Herb Butter — Make a bright, savory butter with shallots, lemon and fresh herbs, then spoon it over oysters and broil until bubbling and golden.
  • Pasta with Burst Tomatoes, White Wine & Oysters — Turn that same compound butter into a beautiful pasta with juicy fall tomatoes, white wine and local oysters.
  • Little Ram Mignonettes & Sauces — Create and taste a variety of accompaniments, including Little Ram's signature BANG BANG!

Along the way, you'll sip wine (or your beverage of choice), cook, taste, and connect with two of the East End's most respected oyster farmers.

Whether you're already an oyster enthusiast or have always wanted to learn how to shuck and cook them, this relaxed, interactive class is a rare opportunity to meet the people behind the oysters while learning delicious, approachable ways to enjoy one of the freshest foods our region has to offer.
