This granola is super crunchy, lightly sweet, and has a cozy hint of cinnamon to wake up your taste buds. The mix of maple syrup and coconut sugar gives it a rich, caramel-like flavor, while olive oil adds a touch of fruitiness that makes it feel extra special. It’s very versatile—toss it on yogurt, sprinkle it over smoothie bowls, mix it into salads, or even bake it into cookies pancakes and muffins.

Ingredients
4 1/4 cups old-fashioned rolled oats
3/4 cups raw pumpkin seeds, hulled
1/2 cup raw sunflower seeds, hulled
1 cups unsweetened coconut flakes
1 cup walnuts, roughly chopped
1/4 cup maple syrup
1/3 cup extra-virgin olive oil
1/4 cup coconut sugar
1 teaspoons kosher salt
1 teaspoons ground cinnamon
Directions
Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
In a large mixing bowl, combine all ingredients. Stir well, making sure everything is evenly coated. Spread the granola in an even layer on the prepared baking sheet.
Bake for 35-45 minutes, stirring every 10-15 minutes to ensure even toasting. The granola is ready when it’s golden brown and smells like heaven.
Cool completely before storing—this helps it crisp up! Transfer to an airtight container and store at room temperature for up to 1 month.
